Quick – Mini Penne and Veges

Here is my first recipe, many more to come. Like so many others, I love to create in my kitchen.  I also have no patience. So quick delicious meals are my favorite things.

Here’s one such favorite everyone seems to love. Shhhh don’t tell them it is healthy!  Fresh foods are always best in my book. Let’s take a virtual trip to Italy in my kitchen!

Mini Penne and Veges

Mini Penne and Veges

Ingredients:

1 Box Mini Penne – Barilla for instance

1 cup fresh broccoli

1 cup fresh green beans

1 cup cut white corn, frozen – I like Trader Joes

1/2 cup four cheese blend, shredded – try BelGioioso

2 tablespoons Olive Oil

3 tablespoons Butter

Directions:

Cook pasta according to directions, al dente (firm not hard and not overcooked).  Add the green beans and corn at the beginning, to cook in the water along with the pasta.  Steam the broccoli.

When pasta and veges are done, drain and move back to the pot.  Toss the mixture with 2 tablespoons olive oil.  Add butter and toss.  Add broccoli and cheese, toss again.

Serve warm with salad and garlic bread.  Serve about 8. Take about 15 minutes to make.
